Bump mapping is a term used in 3d modelling and image manipulation that refers to tricking your eyes into creating the illusion of depth even though what you are looking at is a flat 2d image.

This image describes it better than I can tell you;


Both images are textures that are completely flat, but the bump-mapping image tricks your mind into seeing a 3D illusion.

The shader pack uses this bump mapping to add small ridges and bumps to blocks in an attempt to add a small amount of depth to an otherwise flat block.
