How to select Minecraft version

Start the Minecraft launcher.
At the top menu, click on Installations.
Installations allows you to install and manage multiple versions of Minecraft.
Click on the +New... button
Give the installation a name that helps you understand what the installation is used for.
For Version you need to select the Minecraft version that would allow you to connect to the server. This will change from time to time, but the server should tell you what version to use.
Click Create to create this installation profile.
You can now go back to the top menu and click on Play. On the bottom left there will be a drop-down selection. It is there where you can select all the installations you have set up.

Good, though this needs updating with new screenshots as launcher has changed
