First, you need to have optifine, which I think keeps chunks loaded for longer. Then, you fly around the area you want rendered until it's all rendered, and teleport back to the place where you want to take the screenshot. With luck, the chunks will all be rendered and you can take the shot. If not, then you have to render different parts and edit them together in a separate program.
